What a great idea for a back to school breakfast. Try this gluten-free banana chocolate chip pancakes!
- 6 TBSP coconut flour
- 4 eggs
- 1 banana, mashed
- 2 TBSP coconut oil, melted
- 6 TBSP full fat canned coconut milk
- 1/2 tsp. vanilla
- 1/2 tsp. baking soda
- 1/2 tsp. apple cider vinegar
- 1/4 cup Enjoy Life dark chocolate chips
In a bowl whisk together eggs, banana, coconut milk, and vanilla. Add coconut oil and mix well. Now add coconut flour and whisk again making sure the coconut flour is not lumpy. Now add in baking soda and apple cider vinegar. Last gently mix in chocolate chips.
Grease a skillet with 1 tsp. of ghee or coconut oil and spoon the batter into the skillet to make small pancakes. Use about 1/4 cup batter for each pancake.
Allow the pancakes to cook for about 3 minutes, and when a few bubbles appear, flip the pancakes and cook for another 3 minutes. Repeat with the remaining batter, greasing the pan each time.
